We eat a lot of fruit. Especially in the weekends. However, sometimes my grocery shopping exceeds the appetite of my family. Meaning, I buy a whole watermelon because the Fab Frenchman loves watermelons and so do I. However, the kids do not like watermelon at all. So a whole watermelon can be a little much (on top of all the other awesome summer fruits). Thankfully there is always a solution. Bring on the Watermelemonade!

Watermelemonade (or watermelon-lemonade but you got that, right?)
½ watermelon (should yield approx. 4 cups of watermelon juice)
1 ¼ L (5 cups) of water
1 cup of Lemon juice. For me that is 8 to 10 lemons
150 gr (2/3 cup) of Golden Caster sugar
1 tsps. of vanilla extract
Bring 250 ml (1 cup) of water to a simmer with the sugar until the sugar has completely dissolved. Set aside and let it cool. Roll the citrus between the palm of your hand and the table to loosen the skin. Then press the juice. Cube the Watermelon, take out the black seeds and put it in the blender. Turn on the blender for 4 to 5 minutes. Add the vanilla extract and the lemon juice to the watermelon, stir and set aside.
Once the syrup is cooled down add the citrus-vanilla-watermelon mixture. Let it sit for another 30 minutes so all flavors can really get to know each other. Then strain the lemonade through a strainer + cheesecloth and add the remaining 1 liter (4 cups) of water. Cool it in an adequate recipient (like a glass bottle) for another 3 hours in the refrigerator. You can serve this as it comes or….some vodka could make it into a neat and refreshing (grown-up!)“drink before dinner”.
